Sweetcorn fritters

These quick, easy and versatile fritters are simple to make and easy to adapt to whatever you have in.  They are a hit with all the family and a great way to get the kids to try new things.

These vegetarian fritters are a tasty treat that go really well with a tasty salad or on their own, with a peppery side salad and they even work with a little splash of ketchup.

Quick and easy sweetcorn fritters ready for an easy lunch

Ingredients

150g frozen sweetcorn - weigh them out 10 minutes before you start

50g plain flour

1/2 tsp baking powder

1 medium egg - whisked

1 tsp dried coriander leaf

1-2 tsp chili puree

Pinch of salt

1/4 cup of milk 

Olive oil spray

 

Method

1. In a bowl whisk the chilli puree into the egg

2. In a separate bowl mix the sweetcorn, flour, baking powder and dried coriander

3. Add the wet ingredients to the sweetcorn mixture and stir to combine

4. Put half of the mixture into a food processor, blender or smoothie maker with the milk and blend until smooth

5. Pour the batter back into the bowl with the unblended half and mix well

6. Heat a lightly oiled frying pan on a medium heat

7. Add a heaped dessert spoon of the batter to the pan and lightly brown for around 2 minutes on each side

8. Recipe makes 6 fritters which are great served with a peppery salad or a little bit of ketchup
